I spontaneously baked this recipe for our last course unit in postnatal gymnastics.
The other mums were not only very happy and devoured these cookie bars, quite a few also asked for the recipe. The ingredients are probably rather exotic for most, but I’m counting on my audience here to have most of them at home by default ;-).
By the way, if you don’t have a 20x20cm baking pan like me (but only larger ones), just double the amount, you won’t regret it. Otherwise, take a look at your casserole dishes, maybe there’s something suitable there.
Incidentally, when I made the recipe a second time, I made a mistake in the nut butter jar and accidentally got hazelnut butter. Tastes just as good!
Ingredients:
- 250g spelt, spelt whole grain or rice flour for a gluten-free version
- 2 tbsp baking powder
- 1 pinch of salt
- 60g coconut oil
- 100g coconut blossom sugar
- 50g peanut butter (also tastes good with hazelnut butter or almond butter)
- 50ml plant drink
- 1 tsp vanilla extract
- 80g vegan dark chocolate or vegan chocolate chunks
Additionally:
Baking paper and a baking pan (approx. 20x20cm)
Preparation:
- Preheat the oven to 180°C top/bottom heat. Line the baking tin with baking paper or grease with coconut oil. I always prefer to use baking paper, then nothing can go wrong.
- Mix the dry ingredients in a bowl (flour, baking powder, and 1 pinch of salt)
- Melt the coconut oil in a water bath (or like me, carefully in the microwave)
- In another bowl, first mix the coconut oil with the peanut butter and coconut blossom sugar using a fork. Then add the rest of the remaining ingredients except for the chocolate.
- If you’re not using ready-made chocolate chunks, don’t chop the chocolate too finely.
- Now add the flour mixture to the wet ingredients (or vice versa) and stir everything into a not too liquid mass. As always: Don’t stir too much! Fold in the chopped chocolate or chocolate chunks.
- Pour everything into your prepared baking pan and smooth out the batter.
- Bake in the preheated oven for approx. 15 minutes (test with a stick). Once removed, allow to cool and then enjoy.
